Here is a recipe for my favorite dish at Franc's. Great idea for dinner tonight! Click on this link epicurious.com My favorite source for recipes and dinner inspiration is epicurious. I chose this recipe as a guide but used more lemon juice, I like tart and tangy, no stock in my sauce (did not have any) but did use some water to thin it at the end.
The wonderful thing about this meal is that I was able to make it with items I had in my pantry, my fridge and freezer. Just add lemons.
*always try to use organic meat, at Stop & Shop p/u Nature's Promise individually packaged chicken breasts when they are on sale and freeze them, use as needed. There will be a future post about what the essential organic items I think you should use/buy are*
This dish is great for a dinner party served with asparagus and pilaf. You can prepare the chicken breasts before hand and keep warm in oven. Right before you serve toss with the sauce, in the pan, so it will not get soggy. You can also add capers to sauce, but eliminate salt in recipe. For a fancy super simple yet elegant dessert try Dr. Oekter's Lava cakes (by the boxed cake mixes at market, and the pans are included!) with some vanilla bean ice cream and berries.
I served with some lightly sauteed zucchini slices and some rice. Also great served with angel hair pasta and broccoli. Pour a glass of the wine you cooked with and enjoy an inexpensive restaurant dinner at home for a fraction of the price.
